Intense green fruity extra virgin olive oil (+7). On the nose, the sensation of fresh grass, alfalfa, plantago, purslane, daisies and dandelion is clearly perceived. And in deeper inhalations appear aromatic plants such as fresh oregano, sage leaves, fennel, pimpernel and wild calaminth. This complexity of aromas is expressed in the mouth along with the notes of apple and green almond typical of the early harvest of the Arbequina variety; leaving a long and smooth aftertaste of tomato, mallow, borage and thistle leaves. The spicy sensation (+4) is fresh and crunchy and remains one point above the bitter perception (+3), present in the tasting descriptors of the wild plants in its environment.
The slightly fruity juice of the Arbequina plays with soft and velvety tones. These are responsible for the elegant touch. Arbequina olive oil has a fruity aroma of olive, apple, banana and almond. Fontclara Arbequina is a harmonious olive oil whose lively and fragrant notes complement both cold and hot cuisine. Thanks to its rich depth, it remains stable even during the cooking and frying process, so it can refine many dishes.
The Fontclara farm is located in the heart of Baix Empordà, on the edge of the medieval towns of Peratallada, Palau Sator and Ullastret. We produce ecologically and are regularly controlled by the Consell Català de la Prducció Agrària Ecológica. We currently cultivate around 5,400 olive trees on 23 hectares of land, many of them centenary. The olives are harvested by hand in late September or early October, and immediately processed in our own oil mill.
