This early harvest extra virgin olive oil is made with the Royal, Arbequina, Empeltre, and Verdeña olive varieties. The olives are harvested in early November when they are still green and transitioning to the veraison stage.
In the mouth, it has a medium bitterness with a slight pleasant spiciness, and on the nose, it has aromas of tomato, fennel, alloza, and artichoke. This oil is perfect for pairing with fresh cheese, avocado, tomato salad, or vegetables.
